Method
 

Preparation Steps
  1. Preheat your oven to 400°F (204°C).
  2. In a mini food processor, combine the goat cheese, capers, lemon juice, and olive oil. Blend until smooth.
  3. Brush both sides of each slice of bread with olive oil. Place them on a baking sheet and bake for 8 minutes, flipping halfway until golden.
  4. Spread a layer of basil pesto on each slice of toasted bread.
  5. Spread a thick layer of whipped goat cheese over the pesto-covered bread.
  6. Layer slices of smoked salmon on top of the goat cheese.
  7. Garnish with thin slices of red onion and microgreens.
  8. Cut into smaller portions and serve immediately.
