Preparation Steps
- Preheat your oven to 400°F (204°C).
- In a mini food processor, combine the goat cheese, capers, lemon juice, and olive oil. Blend until smooth.
- Brush both sides of each slice of bread with olive oil. Place them on a baking sheet and bake for 8 minutes, flipping halfway until golden.
- Spread a layer of basil pesto on each slice of toasted bread.
- Spread a thick layer of whipped goat cheese over the pesto-covered bread.
- Layer slices of smoked salmon on top of the goat cheese.
- Garnish with thin slices of red onion and microgreens.
- Cut into smaller portions and serve immediately.
