  1. In a large mixing bowl, combine 2 cups of all-purpose flour, 1 teaspoon of salt, and 2 tablespoons of oil to create a crumbly texture. Gradually add enough water—approximately 6–8 tablespoons—mixing until a smooth, pliable dough forms. Cover the dough with a damp cloth and let it rest for about 30 minutes at room temperature while you prepare the filling.
  2. Peel and boil 2 medium-sized potatoes until tender, approximately 15 minutes, then mash them in a mixing bowl. In a frying pan, heat 1 tablespoon of oil over medium heat. Add 1 finely chopped onion and a teaspoon of cumin seeds, sautéing for about 5 minutes until golden brown. Combine the sautéed mixture with the mashed potatoes, 1 cup of green peas, and spices, mixing well to create your flavorful filling.
  3. Add 1 teaspoon of garam masala, 1 teaspoon of chili powder, and salt to taste to the potato mixture. Stir in a tablespoon of lemon juice and 2 tablespoons of finely chopped cilantro, ensuring an even blend of flavors. Allow the filling to cool for a few minutes until it's comfortable to handle.
