  • 3 tablespoons Soy Sauce or tamari for gluten-free
  • 2 tablespoons Hoisin Sauce
  • 1 tablespoon Sweet Chilli Sauce optional
  • 2 tablespoons Mirin or Chinese Cooking Wine
  • 2 cloves Garlic minced
For the Crunch
  • 1 cup Cashews chopped
  • 1 tablespoon Sesame Oil or peanut oil

Step-by-Step Instructions
  1. Prepare Ingredients: Dice chicken breast and chop onion, zucchini, bell pepper, and carrot. Mix soy sauce, hoisin sauce, sweet chili sauce, mirin, and garlic in a small bowl.
  2. Marinate the Chicken: Combine diced chicken with 1 tablespoon of the prepared sauce and cornflour. Let marinate for 10 minutes.
  3. Sauté the Onions: Heat wok and add half of the sesame oil. Sauté chopped onion for 2-3 minutes until fragrant.
  4. Cook the Chicken: Add marinated chicken to the wok and stir-fry for 4-5 minutes until cooked through.
  5. Add the Vegetables: Toss in zucchini, bell pepper, and carrot. Stir-fry for 3-4 minutes.
  6. Pour in the Sauce: Add the sauce and simmer for 2 minutes.
  7. Add Cashews and Serve: Fold in cashews and serve over rice or cauliflower rice.
