- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix gently until combined.
- In a separate bowl, mix together mozzarella and Parmesan cheese with spinach if desired.
- Spread the meat mixture into a rectangle on parchment paper. Layer the cheese filling in the center and roll the meat mixture tightly around it.
- Place the rolled meatloaf seam-side down on a greased baking sheet. Bake for 45-50 minutes until the internal temperature reaches 160°F (71°C).
- About 10 minutes before finishing, spoon marinara sauce over the top and let it bake until warmed and bubbly.
- Remove from oven and let rest for 10 minutes. Slice and serve with extra marinara sauce.
