Preparation Steps
- Prepare the dough. If using homemade dough, place it in a greased bowl and cover for 1 hour to rise.
- Preheat the oven to 500°F. Make sure your baking sheet or pizza stone is ready.
- Prepare the toppings by mixing ricotta, lemon zest, sea salt, and pepper in one bowl. In another bowl, combine corn, Fresno chili, olive oil, salt, and pepper.
- Par-bake the dough with a layer of cornmeal for 8 mins to firm it up without browning.
- Spread the ricotta mixture on the crust, then add mozzarella and corn topping evenly.
- Return to the oven for 10-12 mins until the crust is golden and the cheese is bubbly.
- Remove from oven, add basil pesto and smoked paprika, garnish with fresh basil, slice, and serve.
