Ingredients
  

For the Meatloaf
  • 1 tablespoon Olive Oil vegetable oil is a suitable substitute
  • 1 medium Onion diced; shallots can be used for a milder taste
  • 2 cloves Garlic minced; fresh is best, but powder works too
  • 1 pound Ground Chicken can substitute with ground turkey or lean beef
  • 1 cup Seasoned Breadcrumbs panko for extra crunch or gluten-free as alternative
  • 1/2 cup Milk non-dairy milk is a substitute
  • 1/2 cup Parmesan Cheese can substitute with Pecorino Romano
  • 1 large Egg a flax egg can be used for a vegan option
  • 1/4 cup Fresh Parsley can substitute with dried, using less
  • 1 teaspoon Italian Seasoning or use a mix of oregano, basil, and thyme
  • 1 teaspoon Salt adjust according to dietary needs
For the Gooey Center
  • 1 cup Mozzarella Cheese Strings standard mozzarella is best for melting
For the Topping
  • 1 cup Marinara Sauce store-bought or homemade works
  • 1/2 cup Panko Breadcrumbs or substitute with regular breadcrumbs
  • 2 tablespoons Butter or use margarine or olive oil

Method
 

Preparation Steps
  1. Heat olive oil in a skillet over medium heat, add diced onion and minced garlic, sautéing until softened, about 5 minutes. Remove from heat and cool completely.
  2. In a large bowl, combine cooled onion and garlic with ground chicken, seasoned breadcrumbs, milk, Parmesan cheese, egg, chopped parsley, Italian seasoning, and salt. Mix gently.
  3. On a parchment-lined baking sheet, form ⅔ of the chicken mixture into a rectangle, then place mozzarella cheese strings in the center. Mold the remaining mixture on top to seal the cheese.
  4. Preheat oven to 200°C (400°F). Spread marinara sauce over meatloaf and bake for 45 minutes until cooked through.
  5. Mix panko breadcrumbs, Parmesan, melted butter, and parsley. Remove meatloaf, add mozzarella on top, and sprinkle breadcrumb mixture. Return to oven for 15-20 minutes until golden brown.
  6. Let meatloaf rest for 10 minutes before serving with extra marinara on the side.

Notes

Ensure the onion and garlic mix cools completely before mixing with ground chicken to keep the egg from cooking. Avoid overmixing for moisture and tenderness. Seal mozzarella well to prevent leakage during baking.
