Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine all-purpose flour, quick oats, baking powder, cinnamon, and salt. Stir in the brown sugar.
  3. In a separate bowl, whisk together melted butter, maple syrup, and egg until smooth. Pour this mixture into the dry ingredients and mix until combined.
  4. Reserve ½ cup of the crumb mixture for the topping and press 1 ½ cups of the remaining mixture into the bottom of the pan.
  5. In another bowl, combine the diced strawberries and rhubarb with lemon juice. Mix granulated sugar and cornstarch, then stir into the fruit mixture.
  6. Spread the prepared fruit filling evenly over the crust. Crumble the reserved oat mixture on top.
  7. Bake the bars for 20-25 minutes until golden brown and the filling bubbles slightly.
  8. Allow to cool completely in the pan for about 20-30 minutes before lifting out and slicing into squares.
