Preparation Steps
- Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
- In a large mixing bowl, combine all-purpose flour, quick oats, baking powder, cinnamon, and salt. Stir in the brown sugar.
- In a separate bowl, whisk together melted butter, maple syrup, and egg until smooth. Pour this mixture into the dry ingredients and mix until combined.
- Reserve ½ cup of the crumb mixture for the topping and press 1 ½ cups of the remaining mixture into the bottom of the pan.
- In another bowl, combine the diced strawberries and rhubarb with lemon juice. Mix granulated sugar and cornstarch, then stir into the fruit mixture.
- Spread the prepared fruit filling evenly over the crust. Crumble the reserved oat mixture on top.
- Bake the bars for 20-25 minutes until golden brown and the filling bubbles slightly.
- Allow to cool completely in the pan for about 20-30 minutes before lifting out and slicing into squares.
