Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground chicken, garlic powder, paprika, salt, and pepper. Mix until well blended.
  2. Heat a tablespoon of oil in a skillet over medium heat. Add the chicken mixture and cook for 8-10 minutes until golden and cooked through.
  3. In a separate skillet, sprinkle cheese over medium-low heat. Cook for 3-4 minutes until melted and crispy. Slide onto parchment to cool.
  4. In a blender, combine cottage cheese, ranch seasoning, and lemon juice. Blend until smooth, about 30 seconds.
  5. Warm each tortilla in a dry skillet for about 30 seconds on each side until pliable.
  6. Assemble tacos by filling tortillas with chicken, topping with pickles, cabbage, sauce, pickle brine, and cheese lace.
  7. Serve immediately while the cheese is crispy and enjoy!
