Prepare the Crust
- Preheat your oven to 325°F. In a medium bowl, mix the graham cracker crumbs with the melted butter until fully combined. Press into the bottom of a 9-inch springform pan and bake for 10 minutes. Let cool.
Create the Filling
- In a large bowl, combine softened cream cheese and sugar. Beat until creamy. Add eggs one at a time, then mix in vanilla and sour cream until smooth.
Assemble and Bake
- Pour filling over the cooled crust. Bake for 50–60 minutes until edges set and center is slightly jiggly. Avoid overbaking.
Cool and Chill
- Turn off the oven and leave the cake inside with the door ajar for an hour. Then chill in the refrigerator for at least 4 hours or overnight.
