  • 2 tablespoons red wine vinegar or white wine vinegar
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano or fresh oregano
  • 1 teaspoon Dijon mustard optional
  • 1 pinch sea salt adjust to taste
  • 1 pinch black pepper to taste
Salad
  • 1 medium English cucumber seeded and chopped
  • 1 medium green bell pepper chopped
  • 1 cup cherry tomatoes halved
  • 1 cup feta cheese cubed or crumbled
  • 1 small red onion thinly sliced
  • 1/2 cup Kalamata olives pitted
  • 1/4 cup fresh mint leaves optional

Method
 

Preparation
  1. Whisk together the dressing ingredients in a small bowl and set aside.

  4. Drizzle dressing over the salad and toss gently to combine.
  5. Garnish with extra oregano and mint before serving.
