Ingredients
  

For the Stir-Fry
  • 1.5 tablespoons extra virgin olive oil or any vegetable oil
  • 2 large eggs optional for a lighter dish
  • 2 cups broccoli florets or snap peas/green beans
  • 1 medium red bell pepper any color can be used
  • 4 stalks green onions chopped
  • 1 pound shrimp (prawns) frozen acceptable if thawed
For the Sauce
  • 1/4 cup low-sodium soy sauce or tamari for gluten-free
  • 2 tablespoons hoisin sauce or teriyaki if unavailable
  • 1 tablespoon fish sauce omit for vegetarian option
  • 1 tablespoon chili paste or sweet chili sauce for milder
For the Noodles
  • 8 ounces lo mein noodles pre-cooked preferred

Method
 

Cooking Steps
  1. Heat the oil in a large skillet or wok over medium-high heat for 1-2 minutes until shimmering.
  2. Stir-fry the broccoli, red bell pepper, and green onions for 2-3 minutes. Add the shrimp and stir-fry for an additional 5-6 minutes until shrimp is pink and opaque.
  3. In a bowl, mix the soy sauce, hoisin sauce, fish sauce, and chili paste. Set aside.
  4. Prepare the lo mein noodles according to the package instructions. Drain and set aside.
  5. If using, scramble the eggs in a separate skillet with 1/2 tablespoon of olive oil for about 3 minutes. Add to shrimp and veggies.
  6. Combine the lo mein noodles and the sauce with the shrimp and vegetables, cooking for an additional 2-3 minutes to absorb flavors.
  7. Serve immediately, garnished with additional green onions or sesame seeds if desired.
