Ingredients
  

For the Chicken
  • 2 pounds Boneless, Skinless Chicken Breasts Alternatively, use thighs for extra tenderness.
  • 4 cloves Garlic Or use garlic powder.
  • 1/4 cup Fresh Lemon Juice Vinegar can be a substitute.
  • 1 medium Onion Shallots can be used for a milder flavor.
  • 1/2 cup Water
  • 2 tablespoons Olive Oil Avocado oil is a good alternative.
  • 2 tablespoons Red Wine Vinegar Can swap with apple cider vinegar.
  • 1 tablespoon Oregano Use half the amount if using dried.
  • 1 teaspoon Allspice Can omit if unavailable.
  • 1 teaspoon Lemon Pepper Plain pepper with lemon zest can work.
For the Tzatziki
  • 1 cup Fat-Free Plain Greek Yogurt Regular yogurt can provide a richer taste.
  • 1 cup Cucumber Swap for other crunchy salad vegetables if needed.
  • 1/4 cup Chopped Fresh Parsley Dill can also be used.
  • 1/4 teaspoon Salt Use to taste.

Method
 

Preparation
  1. Spray the inside of your slow cooker with nonstick cooking spray. Place chicken breasts or thighs in the cooker, laying them flat.
  2. In a mixing bowl, combine minced garlic, fresh lemon juice, diced onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper. Whisk until well-blended, then pour over the chicken.
  3. Cover the slow cooker and cook on HIGH for 3-4 hours or LOW for 6-8 hours until fork-tender.
  4. Prepare the tzatziki by mixing yogurt, minced garlic, grated cucumber, chopped parsley, and salt. Refrigerate for at least 1 hour.
  5. Shred the chicken inside the slow cooker using two forks.
  6. Warm the pocketless pita bread and serve the shredded chicken stuffed with tzatziki and fresh veggies.
