- Spray the inside of your slow cooker with nonstick cooking spray. Place chicken breasts or thighs in the cooker, laying them flat.
- In a mixing bowl, combine minced garlic, fresh lemon juice, diced onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper. Whisk until well-blended, then pour over the chicken.
- Cover the slow cooker and cook on HIGH for 3-4 hours or LOW for 6-8 hours until fork-tender.
- Prepare the tzatziki by mixing yogurt, minced garlic, grated cucumber, chopped parsley, and salt. Refrigerate for at least 1 hour.
- Shred the chicken inside the slow cooker using two forks.
- Warm the pocketless pita bread and serve the shredded chicken stuffed with tzatziki and fresh veggies.
