- In a large microwave-safe bowl, combine semi-sweet chocolate chips, peanut butter, and butter. Microwave in 30-second intervals, stirring until smooth, about 1-2 minutes.
- Once melted, stir in vanilla extract and a pinch of salt until combined and evenly flavored.
- Pour the melted mixture over 6 cups of Rice Chex in a large bowl and gently fold until well coated.
- Transfer the mixture into a large resealable bag or bowl, add 1 cup of powdered sugar, and shake or stir until evenly dusted.
- Spread the coated mixture on a lined baking sheet and freeze for about 30 minutes to set.
