For the Toppings
  • 1 cup Cherry or Grape Tomatoes Any small tomato variety will do.
  • 2 cups Blue Corn Chips

Method
 

Step-by-Step Instructions
  1. In a stand mixer or food processor, add the feta cheese, whipped cream cheese, olive oil, fresh lemon juice, and black pepper. Blend until creamy and smooth.
  2. Wash a handful of cherry or grape tomatoes and cut them in halves or quarters.
  3. Spread the whipped feta mixture into a rectangle shape on a large serving platter.
  4. Arrange the chopped tomatoes in neat stripes across the top of the whipped feta.
  5. Place a bowl of blue corn chips next to the whipped feta on the platter.
