  • 150 g Light Brown Soft Sugar Substitute with caster sugar if needed
  • 150 g Self-Raising Flour Substitute with plain flour plus baking powder if necessary
  • 50 g Cocoa Powder Use high-quality cocoa
  • 2 medium Eggs Room temperature
Frosting
  • 100 g Icing Sugar Key for sweetness
  • 1 tsp Vanilla Extract For flavor
  • 30 ml Evaporated Milk Substitute with double cream if desired
Decoration
  • as needed Pretzels For antlers; mini cookies can substitute
  • as needed Red M&Ms/Smarties For nose
  • as needed Edible Eyes Chocolate chips or homemade options can be used

Instructions
  1. Preheat the oven to 180ºC (or 160ºC for a fan oven) and prepare a muffin tray with 12 baking cups.
  2. Cream the butter and sugar together until light and fluffy, about 3-5 minutes.
  3. Add dry ingredients and eggs to the bowl, mixing until fully combined.
  4. Divide the batter among the cupcake cases, filling each two-thirds full. Bake for 20-22 minutes.
  5. Cool cupcakes in the tray for 5 minutes, then transfer to a wire rack to cool completely.
  6. For frosting, beat butter until soft, then gradually add icing sugar and cocoa, mixing well.
  7. Pipe the frosting onto the cooled cupcakes using a piping bag.
  8. Decorate with pretzels for antlers, red M&Ms for the nose, and edible eyes.
