Ingredients
  

For the Cupcake Base
  • 125 g Unsalted Butter at room temperature
  • 150 g Light Brown Soft Sugar can substitute with caster sugar
  • 150 g Self-Raising Flour or plain flour plus baking powder
  • 50 g Cocoa Powder high-quality cocoa yields best results
For the Frosting
  • 250 g Icing Sugar
  • 1 tsp Vanilla Extract
  • 60 ml Evaporated Milk can replace with double cream in smaller quantity
For Decorations
  • 12 pieces Pretzels for antlers; mini cookies can be alternatives
  • 12 pieces Red M&Ms/Smarties for the reindeer’s nose
  • 12 pieces Edible Eyes chocolate chips can substitute

Method
 

Cupcake Preparation
  1. Preheat your oven to 180ºC (160ºC fan) and arrange 12 cupcake liners in a muffin tray.
  2. Beat the unsalted butter and light brown sugar together in a mixing bowl for 3-4 minutes until light and fluffy.
  3. Combine self-raising flour, cocoa powder, and medium eggs to the mixture; mix on low speed until just combined.
  4. Spoon batter into liners, filling each about two-thirds full, and bake for 20-22 minutes.
  5. Cool cupcakes in the tray for 5 minutes, then transfer to a wire rack to cool completely.
  6. Beat unsalted butter, then gradually add icing sugar and cocoa powder, mixing until smooth.
  7. Pipe frosting onto cooled cupcakes in swirls.
  8. Press pretzel halves into frosting for antlers and top with a red candy nose and edible eyes.
