Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 bell pepper diced (any color)
  • 1 cup corn kernels fresh or frozen
  • 1 cup heavy cream
  • 2 large eggs
  • 1 teaspoon Old Bay seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 pre-made pie crust 9-inch
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat the oven to 375°F.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and diced bell pepper, cooking for an additional 2 minutes.
  4. Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
  5. Stir in the corn, heavy cream, eggs, Old Bay seasoning, salt, and black pepper. Mix well and remove from heat.
  6. Pour the shrimp mixture into the pre-made pie crust. Sprinkle the shredded cheddar cheese evenly on top.
  7. Bake in the preheated oven for 30-35 minutes, or until the pie is set and the top is golden brown.
  8. Let the pie cool for 10 minutes before slicing. Garnish with chopped parsley before serving.
