Preheat the oven to 375°F.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
Stir in the minced garlic and diced bell pepper, cooking for an additional 2 minutes.
Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
Stir in the corn, heavy cream, eggs, Old Bay seasoning, salt, and black pepper. Mix well and remove from heat.
Pour the shrimp mixture into the pre-made pie crust. Sprinkle the shredded cheddar cheese evenly on top.
Bake in the preheated oven for 30-35 minutes, or until the pie is set and the top is golden brown.
Let the pie cool for 10 minutes before slicing. Garnish with chopped parsley before serving.
