Ingredients
  

  • 2 cups fresh strawberries hulled and halved
  • 2 cups rhubarb chopped into 1/2-inch pieces
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon butter cut into small pieces
  • 1 package 14.1 ounces refrigerated pie crusts (2 crusts)
  • 1 egg beaten (for egg wash)
  • 1 tablespoon coarse sugar for topping

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, combine the strawberries, rhubarb, granulated sugar, flour, salt, vanilla extract, and lemon juice. Toss gently to coat the fruit evenly. Let the mixture sit for about 15 minutes to allow the juices to develop.
  3. Roll out one pie crust and fit it into a 9-inch pie pan. Trim any excess crust hanging over the edges.
  4. Pour the strawberry-rhubarb filling into the prepared pie crust, spreading it evenly. Dot the filling with small pieces of butter.
  5. Roll out the second pie crust and place it over the filling. Trim and crimp the edges to seal the pie. Cut several slits in the top crust to allow steam to escape.
  6. Brush the top crust with the beaten egg and sprinkle with coarse sugar.
  7. Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for an additional 30-35 minutes, or until the filling is bubbly and the crust is golden brown.
  8. Remove the pie from the oven and let it cool for at least 2 hours before slicing to allow the filling to set.
