  • 1 can Canned Corn or frozen corn
  • 1 medium Red Bell Pepper diced
  • 3 stalks Green Onions sliced
  • 1 cup Shredded Cheddar Cheese or pepper jack
For the Dressing
  • 1 cup Mayonnaise or Greek yogurt
  • 1/2 cup Sour Cream or more Greek yogurt
  • 1 tablespoon Adobo Sauce optional
For the Crunch
  • 1 bag Chili Cheese Fritos or classic Fritos

Method
 

Preparation Steps
  1. Drain a can of corn and rinse if necessary, or cook frozen corn according to package instructions and cool.
  2. Chop the red bell pepper into small pieces and slice the green onions.
  3. In a mixing bowl, combine corn, bell pepper, green onions, and shredded cheddar cheese.
  4. In another bowl, whisk together mayonnaise, sour cream, and adobo sauce; pour over salad and mix well.
  5. Crush chili cheese Fritos into pieces and fold them into the salad before serving.
  6. Transfer to a serving dish and garnish with extra green onions or Fritos; serve immediately.
