  • 1 can Canned whole kernel corn drained
  • 1 Red bell pepper diced
  • 1 cup Shredded Mexican blend cheese
  • 1 cup Mayonnaise or Greek yogurt
  • to taste Black pepper adjust to taste
  • 3 cups Chili Cheese Fritos crushed
  • 1/4 cup Fresh cilantro optional

Preparation Steps
  1. Combine the drained corn, diced red bell pepper, and shredded Mexican blend cheese in a large mixing bowl. Mix thoroughly for about 2 minutes.
  2. Scoop in about a cup of mayonnaise and add black pepper to taste. Mix well for about another minute.
  3. Taste the salad base and adjust seasoning with more black pepper or salt if needed.
  4. Fold in the crushed Chili Cheese Fritos just before serving to maintain their crunch.
  5. Garnish with freshly chopped cilantro if desired, and serve in a dish immediately.
