Ingredients

For the Base
  • 1 cup Medjool Dates Natural sweetness and binding agent; easily substitute with any other soft dates.
  • 2 cups Gluten-Free Rolled Oats Provides a chewy texture and structure; regular rolled oats work if gluten isn’t a concern.
  • 1/2 cup Creamy Nut Butter or Seed Butter Adds healthy fats and creaminess; great alternatives include peanut, almond, or sunflower butter.
  • 2 tablespoons Ground Flaxseeds Boosts nutrition with fiber and omega-3s; optional, but enhances the texture nicely.
  • 1 teaspoon Ground Cinnamon Offers warmth and flavor; feel free to adjust based on your personal taste preferences.
For the Topping
  • 1 cup Yogurt (dairy or non-dairy) Acts as a creamy topping that adds nutrition; any flavored yogurt can be used for a fun twist.
  • 1 cup Frozen Berries Adds natural sweetness and jam-like texture; while fresh berries are great, frozen ones are easier to mix.

Equipment

  • Food Processor
  • 8x8-inch baking dish
  • Parchment paper

Method

Preparation Steps
  1. In a food processor, combine the Medjool dates and pulse until they are broken down into a sticky paste or small pieces.
  2. Add the gluten-free rolled oats, creamy nut or seed butter, ground flaxseeds, and ground cinnamon to the food processor. Blend everything together until the mixture is thoroughly combined.
  3. Line an 8x8-inch baking dish with parchment paper. Transfer the mixture into the dish and spread it out evenly. Press it firmly down to compact the base.
  4. Spoon yogurt over the compacted base, spreading it evenly. Then, gently add your frozen berries on top.
  5. Place the baking dish in the freezer for about 1-2 hours, or until the mixture is solid enough to cut into bars.
  6. After the bars have set, remove the dish from the freezer and transfer the block onto a cutting board. Cut into squares or bars.

Ensure the base mixture is tightly packed in the baking dish to prevent the bars from falling apart when cut. Let the bars sit at room temperature for 3-5 minutes for the best texture.
