Cooking Instructions
  1. Prep the Skillet: Heat a large cast iron skillet over medium heat. Add 1 tablespoon of olive oil along with 2 tablespoons of ghee or butter. Allow to melt until shimmering, about 1-2 minutes.
  2. Cook Potatoes: Add Yukon Gold potatoes to the skillet in a single layer. Sprinkle with minced garlic, thyme, oregano, sea salt, and black pepper. Cook undisturbed for 2-3 minutes, then stir and cook for another 8-10 minutes until golden brown and fork-tender. Remove and set aside.
  3. Sear Steak: Increase heat to medium-high. Add remaining 2 tablespoons of ghee. Season steak with sea salt and black pepper, then place in skillet for 2 minutes to sear. Stir and cook for an additional 1-2 minutes until evenly browned.
  4. Combine and Serve: Return crispy potatoes to skillet with steak, tossing to combine. Taste for seasoning, add salt and pepper if needed. Finish with freshly chopped parsley and serve warm.
