Step-by-Step Instructions for Garlic Cottage Cheese Flatbread
  1. In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1 teaspoon of salt, and 1 teaspoon of sugar until well combined.
  2. Add the wet ingredients: 1 cup of plain yogurt, 1 cup of cottage cheese, ½ cup of warm water, 2 tablespoons of melted butter, and 1 tablespoon of olive oil. Mix until a soft dough forms.
  3. Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.
  4. Shape the dough into a ball, cover with a damp cloth and let it rest for 20 minutes.
  5. Divide the dough into 6 equal portions and shape them into balls.
  6. Roll out each dough ball into a round shape, about ¼ inch thick.
  7. Preheat a heavy skillet over medium-high heat, add a small drizzle of olive oil.
  8. Place the rolled flatbread in the hot skillet and cook for about 2 minutes or until bubbles form, then flip and cook the other side for 1-2 minutes until golden brown.
  9. Once cooked, brush each flatbread with a mixture of 2 tablespoons of melted butter and 2 cloves of minced garlic, then sprinkle with chopped parsley and crumbled feta.
  10. Serve warm and enjoy!

Notes

To achieve the best softness, do not over-knead the dough. Allowing the dough to rest helps relax gluten for better texture. Store leftovers wrapped in a clean towel or airtight container.
