  • 1 cup Parmesan Cheese Rich, sharp flavor; Romano cheese is an alternative
  • 1 cup Panko Breadcrumbs Use regular breadcrumbs if needed
  • 2 large Eggs Can use flaxseed meal as vegan option
  • 3 cloves Minced Garlic Adjust to taste
  • 1 teaspoon Garlic Powder Skip if using ample fresh garlic
  • 1 teaspoon Onion Powder Finely minced onions can be used
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Parsley
  • 1 teaspoon Salt Season to personal taste
  • 1 teaspoon Black Pepper Season to personal taste
  • 1/2 cup Whole Milk Replace with plant milk for dairy-free
  • 1 tablespoon Unsalted Butter Omit for dairy-free option
  • 1/4 cup Additional Parmesan For sprinkling on top
  • 2 tablespoons Fresh Parsley For garnish
For the Glaze
  • 1 tablespoon Butter Can be omitted for a lighter glaze
  • 2 cloves Minced Garlic Use fresh for best taste
  • 1/4 cup Additional Parmesan For enhancing richness
  • 2 tablespoons Chopped Fresh Parsley Substitute with dried parsley if fresh isn't available

Method
 

Instructions
  1. Preheat your oven to 190°C (375°F).
  2. Prepare your baking sheet with parchment paper or grease lightly.
  3. In a mixing bowl, combine ground chicken, Parmesan, panko breadcrumbs, minced garlic, eggs, and spices until just mixed.
  4. Transfer the mixture to the baking sheet and shape it into a loaf.
  5. Bake for 40-45 minutes or until the internal temperature reaches 74°C (165°F).
  6. Melt butter in a saucepan, sauté additional garlic, then stir in more Parmesan and parsley until the mixture thickens.
  7. Brush the glaze over the meatloaf and return to the oven for 5-7 minutes.
  8. Allow the meatloaf to rest for 5 minutes before slicing. Garnish with fresh parsley.
