Ingredients
  

For the Cookies
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1/2 cup molasses
  • 1 large egg
For the Filling
  • 1 cup cream cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Method
 

For the Cookies
  1. Preheat oven to 350°F (175°C). In a bowl, mix flour, baking soda, ginger, cinnamon, cloves, and salt.
  2. In another bowl, cream together butter and brown sugar until fluffy. Beat in molasses and egg.
  3. Gradually mix in dry ingredients until combined. Chill dough for 30 minutes.
  4. Scoop tablespoon-sized portions onto baking sheet. Bake for 10 minutes until set. Let cool.
For the Filling
  1. In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Spread filling on one cookie and sandwich with another. Repeat with remaining cookies.
