Ingredients
  

For the Cookie Base
  • 2 cups Gluten Free Flour recommended: Cup4Cup; add 2 tsp xanthan gum if blend lacks it
  • ¼ cup Cornstarch can replace with additional gluten-free flour
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • ¾ cup Unsalted Butter room temperature
  • 1 cup Light Brown Sugar for moisture
  • ½ cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 1 tsp Kosher Salt Diamond Crystal recommended
For the Eggs Mixture
  • 1 large Egg can substitute with aquafaba for vegan option
  • 1 large Egg Yolk
For the Chocolate & Nuts
  • 425 grams Mixed Chocolate 62% dark, Valrhona milk, and Ghirardelli mini chips
  • 1 cup Toasted Pecans or walnuts, omit for nut-free
Optional Enhancements
  • to taste Sea Salt for sprinkling before baking

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together the dry ingredients: gluten-free flour, cornstarch, baking powder, and baking soda. Set aside.
  2. In a stand mixer, beat the unsalted butter, light brown sugar, granulated sugar, and kosher salt on medium speed until light and fluffy.
  3. Add the egg and egg yolk one at a time, mixing well, then add the vanilla extract.
  4. Gradually blend in the dry ingredient mixture until just combined, then fold in the mixed chocolate and toasted pecans.
  5. Scoop the dough into 6oz portions, place on a lined baking sheet, cover with plastic wrap, and refrigerate for at least 12 hours.
  6. Preheat oven to 375°F (190°C), line baking sheets, space out the chilled dough, and flatten slightly.
  7. Bake in preheated oven for 10 minutes, then lower temperature to 350°F (175°C) and bake for an additional 6-9 minutes.
  8. Let cookies cool on baking sheets for 5-10 minutes before transferring to a wire rack.
