  • 1 cup sweet gherkins or dill pickles for tangier flavor
  • 1 medium red bell pepper or any color for variety

  • 1 medium red onion or shallots for milder flavor
  • 2 large hard-boiled eggs omit for vegan version
For the Dressing
  • 1 cup mayonnaise or vegan mayo
  • 1/2 cup sour cream or Greek yogurt
  • 2 tbsp sweet pickle juice or lemon juice
  • 1 tbsp red wine vinegar or apple cider vinegar
  • 1 tbsp sugar adjust to taste
  • 1 tbsp Dijon mustard or yellow mustard
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1/2 tsp garlic powder
  • 1/4 tsp crushed red pepper

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add 8 oz of dry macaroni noodles and cook for 8–10 minutes until al dente. Drain and rinse under cold water.
  2. Finely dice the sweet gherkins, red bell pepper, celery, and red onion. Add hard-boiled eggs if using. Place all diced ingredients in a large mixing bowl.
  3. In a separate bowl, combine mayonnaise, sour cream, sweet pickle juice, red wine vinegar, sugar, Dijon mustard, salt, black pepper, garlic powder, and crushed red pepper. Whisk until smooth.
  4. Add the cooled macaroni to the bowl with the vegetables. Pour the dressing over and gently fold together until well coated.
  5. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
