  • 1 teaspoon Dried Oregano You can use fresh for more flavor.
  • 1/2 teaspoon Salt Adjust to your taste.

Method
 

Steps
  1. In a large mixing bowl, combine the drained white beans, fresh lemon juice, olive oil, minced garlic, dried oregano, salt, and black pepper. Stir gently and let rest for 15-20 minutes.
  2. While the beans marinate, chop the cucumber, halve the cherry tomatoes, and slice the red onion. Prepare Kalamata olives and chop parsley or dill.
  3. After marination, add cucumber, cherry tomatoes, red onion, and olives to the marinated beans. Toss gently to combine.
  4. Sprinkle crumbled feta cheese over the salad, fold gently to incorporate.
  5. Serve immediately or chill in the refrigerator for 20-30 minutes to deepen flavors.
