Ingredients
  

Marinade
  • 1 lb Chicken Breast Boneless, skinless
  • 2 tbsp Olive Oil Extra virgin for enhanced taste
  • 1 cup Plain Yogurt Nonfat or whole milk
  • 1 tbsp Lemon Zest Fresh zest preferred
  • 2 tbsp Fresh Lemon Juice For maximum zestiness
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 2 cloves Garlic Cloves Minced
  • 1 tbsp Dried Oregano Fresh substitutes beautifully
Tzatziki Sauce
  • 1 cup Cucumber Peeled and grated
  • 2 tbsp Fresh Dill Dried can be used if fresh isn't handy

Method
 

Marinade Prep
  1. In a large bowl, whisk together the plain yogurt, lemon zest, fresh lemon juice, cumin, salt, black pepper, minced garlic, and dried oregano.
  2. Mix until smooth, ensuring all ingredients are well incorporated.
Chicken Marination
  1. Add the boneless chicken pieces to the marinade, tossing them to ensure they are completely coated.
  2. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, up to 24 hours.
Tzatziki Sauce
  1. Grate the cucumber, squeeze out excess water, and combine with yogurt, minced garlic, dried oregano, fresh dill, lemon juice, salt, and black pepper.
  2. Mix well, refrigerate until serving.
Skewer Preparation
  1. Soak wooden skewers in water for about 5 minutes before cooking.
  2. Thread 4-5 pieces of marinated chicken onto each skewer.
Cooking Options
  1. For grilling, preheat to medium-high heat and cook skewers for 5-6 minutes on each side.
  2. For baking, preheat oven to 400°F and bake skewers for 12-15 minutes.
Serving
  1. Serve warm alongside tzatziki sauce for dipping.
