For the Shrimp

Method
 

Preparation
  1. In a mixing bowl, whisk together ¼ cup of olive oil, 3 tablespoons of freshly squeezed lemon juice, 4 minced cloves of garlic, 1 tablespoon of honey, 1 teaspoon of smoked paprika, and ½ teaspoon of cayenne pepper. Season with salt and pepper to taste.
  2. Add 1 pound of peeled and deveined jumbo shrimp to the marinade, tossing gently until they are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  3. While the shrimp marinates, preheat your grill to medium-high heat, reaching about 375°F to 450°F.
  4. Once marinated, thread the shrimp onto skewers, making sure they are snug but not overly crowded.
  5. Place the skewered shrimp on the preheated grill and cook for about 2-3 minutes on each side.
  6. Once the grilled jumbo shrimp are done, carefully remove them from the skewers and place them on a serving platter.
