  • 1 tablespoon Fresh Thyme or adjust dried herbs to taste
  • 1 tablespoon Fresh Rosemary or adjust dried herbs to taste
  • Salt to taste
  • Black Pepper to taste

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, thyme, and rosemary. Season with salt and pepper to taste.
  2. Place chicken thighs in a shallow dish or resealable bag. Pour marinade over chicken, ensuring it's well coated. Seal and marinate in the refrigerator for at least 30 minutes, ideally 1-2 hours.
  3. Preheat grill or grill pan to medium-high heat (around 400°F). Lightly coat grill pan with oil if using.
  4. Remove chicken from marinade. Discard remaining marinade. Grill chicken for 5-6 minutes on each side until golden-brown and cooked to an internal temperature of at least 165°F.
  5. Let chicken rest for 5 minutes before slicing. Serve warm, garnished with extra lemon slices or fresh herbs.
