Ingredients
  

  • 2 cups cooked chicken shredded
  • 1/4 cup Thai peanut sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes optional
  • 1 head of butter or romaine lettuce leaves separated
  • 1/2 cup shredded carrots
  • 1/2 cup cucumber thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped peanuts for garnish

Method
 

  1. In a large bowl, combine the shredded chicken, Thai peanut sauce, soy sauce, lime juice, honey, garlic powder, ground ginger, and red pepper flakes. Mix well until the chicken is evenly coated.
  2. Preheat a grill or grill pan over medium heat. Add the chicken mixture and grill for about 5-7 minutes, stirring occasionally, until heated through and slightly caramelized.
  3. While the chicken is grilling, prepare the lettuce leaves by rinsing them under cold water and patting them dry.
  4. Once the chicken is ready, remove it from the grill and let it cool slightly.
  5. To assemble the wraps, take a lettuce leaf and fill it with a spoonful of the grilled chicken mixture, followed by shredded carrots, cucumber slices, and a sprinkle of chopped cilantro.
  6. Top each wrap with chopped peanuts for added crunch. Serve immediately.
