Preheat a grill or grill pan over medium heat. Add the chicken mixture and grill for about 5-7 minutes, stirring occasionally, until heated through and slightly caramelized.
While the chicken is grilling, prepare the lettuce leaves by rinsing them under cold water and patting them dry.
Once the chicken is ready, remove it from the grill and let it cool slightly.
To assemble the wraps, take a lettuce leaf and fill it with a spoonful of the grilled chicken mixture, followed by shredded carrots, cucumber slices, and a sprinkle of chopped cilantro.
