- Preheat your grill to medium-high heat, around 375°F (190°C).
- Slice the medium zucchinis lengthwise into even slices, about 1/4 inch thick.
- Brush both sides of the zucchini slices generously with olive oil. Sprinkle salt and black pepper over both sides to taste.
- Carefully place the seasoned zucchini slices on the preheated grill. Grill for 3-4 minutes on each side.
- Once grilled, place the zucchini slices on a serving platter in a single layer.
- While the grilled zucchini is still warm, evenly sprinkle crumbled feta cheese over the top.
- Scatter torn or chopped fresh basil leaves across the feta-covered zucchini.
