Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
  2. In a large skillet, heat olive oil over medium heat, then sauté chopped onion and minced garlic for about 2 minutes.
  3. Add the ground turkey to the skillet and cook for 5-6 minutes, breaking it apart until fully cooked.
  4. Stir in diced tomatoes, dried Italian herbs, salt, and pepper; simmer for 3-4 minutes.
  5. Layer half of the sliced zucchini at the bottom of the greased baking dish, followed by half the turkey mixture and half the shredded mozzarella cheese. Repeat layers.
  6. Bake uncovered for 30-35 minutes until the cheese is bubbly and golden brown.
  7. Let the casserole cool for 5 minutes before serving.
