Step-by-Step Instructions
- Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper or aluminum foil.
- In a medium bowl, combine soy sauce, pineapple juice, honey, minced garlic, and a hint of ginger. Whisk well.
- Pat the chicken thighs dry and place them in a shallow dish. Pour half of the sauce over the chicken and marinate for at least 15 minutes.
- Spread chicken on the sheet pan and add pineapple, bell peppers, and onion. Drizzle with olive oil and toss vegetables.
- Roast the dish in the oven for 25-30 minutes, flipping chicken halfway through.
- In the last 10 minutes, brush the remaining sauce over the chicken thighs.
- If desired, broil for 2-3 minutes for added color and texture.
- Remove from oven, garnish with sesame seeds or herbs, and serve over rice.

Notes
For best results, marinate the chicken longer and cut veggies evenly for uniform roasting. Serve with rice or salad for a balanced meal.
