  • 2 cups Pineapple Fresh chunks or well-drained canned
  • 2 cups Bell Peppers Red & Yellow, cut into strips
  • 1 Red Onion Cut into wedges
For the Sauce
  • 1/4 cup Soy Sauce Or Coconut Aminos
  • 1/4 cup Pineapple Juice Fresh or from canned pineapple
  • 2 tablespoons Honey Or Brown Sugar
  • 2 cloves Garlic Minced, fresh preferred
For the Roasting
  • 2 tablespoons Olive Oil For drizzling on vegetables
  • to taste Salt For seasoning
  • to taste Black Pepper For seasoning
  • to taste Paprika For seasoning
  • to taste Chili Flakes Optional for spice

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper or aluminum foil.
  2. In a medium bowl, combine soy sauce, pineapple juice, honey, minced garlic, and a hint of ginger. Whisk well.
  3. Pat the chicken thighs dry and place them in a shallow dish. Pour half of the sauce over the chicken and marinate for at least 15 minutes.
  4. Spread chicken on the sheet pan and add pineapple, bell peppers, and onion. Drizzle with olive oil and toss vegetables.
  5. Roast the dish in the oven for 25-30 minutes, flipping chicken halfway through.
  6. In the last 10 minutes, brush the remaining sauce over the chicken thighs.
  7. If desired, broil for 2-3 minutes for added color and texture.
  8. Remove from oven, garnish with sesame seeds or herbs, and serve over rice.
