Cake Layers
  • 1 box White Cake Mix can substitute with gluten-free option
  • 1 cup Milk almond milk for dairy-free
  • 1/2 cup Vegetable or Canola Oil melted coconut oil enhances flavor

  • 1 package Instant Vanilla Pudding Mix optional for lighter cake

  • 1 can Crushed Pineapple (well drained) fresh pineapple for better texture
Filling
  • 1 cup Sugar can use sweetener substitutes
  • 1 cup Sweetened Shredded Coconut unsweetened for lower sugar
  • 1 cup Sour Cream Greek yogurt can be used
Frosting
  • 1 container Frozen Whipped Topping or homemade whipped cream
  • 1 cup Reserved Filling blend of pineapple, sugar, coconut, and sour cream

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease three 9-inch round baking pans.
  2. In a large mixing bowl, combine the white cake mix, milk, vegetable oil, eggs, pudding mix, and orange gelatin.
  3. Mix on medium speed for about 2 minutes until smooth.
  4. Divide the batter among the three pans and bake for approximately 25 minutes.
  5. Cool the layers in the pans for 10 minutes, then transfer to wire racks to cool completely.
  6. Combine the drained pineapple, sugar, shredded coconut, and sour cream in a separate bowl; set aside 1 cup for frosting.
  7. Assemble the cake by layering the first cake layer with half the filling, then add the second layer and rest of the filling, and finally top with the third layer.
  8. Mix the thawed whipped topping with reserved filling and frost the cake.
  9. Refrigerate for at least 30 minutes before serving.
  10. Garnish with orange slices and pineapple tidbits before serving.
