For the Stew
  • 2 pounds Lamb Shoulder or substitute with beef
  • 2 tablespoons Vegetable Oil or olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 medium Onion chopped
  • 3 cloves Garlic minced
  • 3 medium Carrots sliced
  • 2 pounds Potatoes Yukon Gold or Russets, diced
  • 4 cups Beef or Lamb Broth or vegetable broth
  • 1 can Guinness Stout optional
  • 2 tablespoons Tomato Paste
  • 2 teaspoons Thyme fresh or dried
  • 1/4 cup Parsley fresh, chopped
  • 2 Bay Leaves remove before serving
For the Mashed Potatoes
  • 2 pounds Potatoes for Mashing similar to stew
  • 1/2 cup Milk non-dairy alternatives are great
  • 1/4 cup Butter or margarine for dairy-free

Method
 

Step-by-Step Instructions
  1. Season lamb with salt and pepper. Heat oil in a pot over medium-high heat. Brown the lamb for 5-7 minutes.
  2. Add onion and garlic to the pot. Sauté for 3-5 minutes until translucent.
  3. Return lamb to the pot, add carrots, potatoes, and broth. If using, stir in Guinness, tomato paste, thyme, parsley, and bay leaves.
  4. Bring stew to a boil, reduce heat to low, cover, and simmer for 1.5 to 2 hours.
  5. Boil potatoes in salted water until tender. Drain and mash with butter and milk.
  6. Remove bay leaves from stew, adjust seasoning, and serve topped with mashed potatoes.
