  • 2 tablespoons olive oil or canola oil
  • 1 large chopped yellow onion
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 0.5 cups Chianti optional
  • 28 ounces crushed tomatoes
  • to taste fresh thyme or dried
  • to taste fresh rosemary or dried
  • to taste fresh oregano or dried
  • 2 leaves bay leaves
  • to taste salt
  • to taste pepper
  • to taste fresh basil
Meatball Ingredients
  • 1 cup soft bread crumbs
  • 0.5 cups heavy cream or milk
  • 1 large egg
  • 0.5 cups freshly grated Parmesan avoid pre-grated
  • 1 medium grated onion
  • 1/4 cup chopped fresh parsley optional
  • to taste Italian seasoning
  • 1 pound ground beef
  • 1 pound ground pork or alternative
Lasagna Ingredients
  • 12 pieces dried lasagna noodles
  • 15 ounces ricotta cheese full-fat preferred
  • 1 large egg for filling
  • 2 cups shredded mozzarella avoid fresh mozzarella stored in water

Method
 

Preparation Steps
  1. Heat olive oil over medium heat in a large saucepan. Sauté chopped onion until soft, about 5 minutes.
  2. Add minced garlic and cook for 1-2 minutes. Stir in tomato paste and Chianti, simmer for 2-3 minutes.
  3. Add crushed tomatoes, herbs, and bay leaves. Simmer on low for 1-2 hours.
  4. Combine bread crumbs and heavy cream in a bowl. Add egg, garlic, Parmesan, parsley, ground meats, and seasonings, mix well.
  5. Form meatballs and gently add them to the sauce, cooking for 25-30 minutes.
  6. Cook lasagna noodles in salted water, drain, and lay flat on a towel.
  7. Mix ricotta, egg, Parmesan, basil, nutmeg, salt, and pepper in a bowl.
  8. Layer lasagna in a baking pan with sauce, noodles, ricotta, and meatballs; top with mozzarella.
  9. Cover and bake at 375°F for 30 minutes, then uncover and bake for an additional 15 minutes.
  10. Let the lasagna rest for 15-20 minutes before serving.
