Ingredients

  • 2 tablespoons Vegan Butter or olive oil for a lighter option
  • 1 medium Onion, diced yields about 2 cups
  • 1 pound Mushrooms, sliced shiitake and cremini recommended, yields about 7 cups
  • 4 cloves Garlic, minced
For the Seasonings
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Rosemary
  • Sea Salt to taste
  • Pepper to taste
  • 1 tablespoon Dijon Mustard
For the Liquid
  • 2 tablespoons Tamari (or soy sauce) ensure gluten-free as needed
  • 4 cups Vegetable Broth can be homemade or store-bought
  • 1 cup Dairy-Free Milk plain, unsweetened; almond milk recommended
For the Heartiness
  • 1 pound Baby Potatoes, cut into cubes approximately 3 cups
  • 2 cups White Beans, drained and rinsed cannellini recommended
  • 2 tablespoons Cornstarch can be replaced by all-purpose flour or gluten-free blend

Method
 

Cooking Steps
  1. In a large pot or Dutch oven, melt vegan butter over medium heat. Add diced onion and sauté for 4-5 minutes until translucent.
  2. Add sliced mushrooms, thyme, rosemary, salt, and pepper. Cook for 7-10 minutes, stirring occasionally until mushrooms brown.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Sprinkle cornstarch over vegetables, stirring to coat. Add tamari and Dijon mustard, then gradually pour in vegetable broth and baby potatoes.
  5. Bring to a gentle boil, reduce heat to low, and simmer for 15-20 minutes until potatoes are fork-tender.
  6. Stir in white beans and dairy-free milk. Simmer uncovered for 10-15 minutes until desired thickness is achieved.
  7. Taste and adjust seasoning. Serve warm, garnished with fresh parsley.
