Step-by-Step Instructions for Best Sweet Potato Lasagna
  1. Preheat your oven to 350°F (175°C). Coat a 13" x 9" glass baking dish with non-stick spray or shortening.
  2. In a mixing bowl, combine 15 ounces of ricotta cheese, 2 large eggs, 1 teaspoon of garlic powder, a pinch of red pepper flakes, and ½ teaspoon of salt. Stir until smooth.
  3. Spread about ½ cup of marinara sauce across the bottom of the prepared dish. Layer half of the sliced sweet potatoes, then sprinkle ⅓ of the grated elephant garlic. Add 1.5 cups of marinara sauce.
  4. Repeat with the remaining sweet potatoes, garlic, and ricotta mixture. Top with fresh basil leaves.
  5. Finish with a layer of sweet potatoes, pour the remaining marinara sauce over, and sprinkle with mozzarella cheese.
  6. Cover with aluminum foil and bake for 50 minutes. Remove foil and bake for an additional 30 minutes.
  7. Check the doneness of sweet potatoes; if firm, cover again and bake longer, checking every 5 minutes.
  8. Allow the lasagna to rest for at least 15 minutes before slicing and serving warm.
