Step-by-Step Instructions for Best Sweet Potato Lasagna
- Preheat your oven to 350°F (175°C). Coat a 13" x 9" glass baking dish with non-stick spray or shortening.
- In a mixing bowl, combine 15 ounces of ricotta cheese, 2 large eggs, 1 teaspoon of garlic powder, a pinch of red pepper flakes, and ½ teaspoon of salt. Stir until smooth.
- Spread about ½ cup of marinara sauce across the bottom of the prepared dish. Layer half of the sliced sweet potatoes, then sprinkle ⅓ of the grated elephant garlic. Add 1.5 cups of marinara sauce.
- Repeat with the remaining sweet potatoes, garlic, and ricotta mixture. Top with fresh basil leaves.
- Finish with a layer of sweet potatoes, pour the remaining marinara sauce over, and sprinkle with mozzarella cheese.
- Cover with aluminum foil and bake for 50 minutes. Remove foil and bake for an additional 30 minutes.
- Check the doneness of sweet potatoes; if firm, cover again and bake longer, checking every 5 minutes.
- Allow the lasagna to rest for at least 15 minutes before slicing and serving warm.
