- Begin by rinsing your fresh strawberries under cool water. Pat them dry gently with a paper towel. Next, remove the green stems carefully using a paring knife. Make a deep 'X' cut at the tip of each berry, ensuring you create a pocket for the delicious filling.
- In a medium mixing bowl, add softened cream cheese, confectioners’ sugar, and almond extract. Use an electric mixer on medium speed to beat the mixture for about 2–3 minutes until it’s light, fluffy, and smooth.
- Using a piping bag or a resealable plastic bag (with the corner snipped off), fill each prepared strawberry with about 2 teaspoons of the cheesecake mixture.
- For an extra touch of flavor and allure, sprinkle grated chocolate over the freshly filled strawberries.
- Place the filled strawberries on a serving platter and cover them with plastic wrap. Refrigerate for at least 30 minutes to allow the cheesecake filling to set.
