  • 400 g Short Pasta (Fusilli or gemelli)
  • 2 large Onions (thinly sliced) Yellow or sweet onions
  • 2 tbsp Balsamic Vinegar Can substitute with red wine vinegar
For the Cheese Mixture
  • 200 g Goat’s Cheese (crumbled) Blue cheese is a good alternative
  • 200 ml Double Cream Heavy cream or crème fraîche can be used
For the Topping
  • 100 g Mozzarella (grated) Fresh mozzarella is recommended
  • 50 g Parmesan (grated) Pecorino can be used for a sharper flavor
For Cooking
  • 1 tbsp Olive Oil Any cooking oil can substitute
  • Salt & Black Pepper To taste
  • Fresh Thyme (optional) Dried thyme can be used

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F).
  2. Cook the pasta in salted boiling water for about 8-10 minutes until al dente. Drain and set aside.
  3. In a skillet, heat olive oil and caramelize the onions for 15-20 minutes until golden-brown.
  4. Stir in balsamic vinegar and cook for another 5 minutes until thickened.
  5. Mix double cream with crumbled goat’s cheese, seasoning with salt and black pepper until smooth.
  6. Combine cooked pasta, caramelized onions, and cheese mixture in a baking dish.
  7. Add mozzarella and Parmesan on top.
  8. Bake for 20-25 minutes until golden and bubbly.
  9. Allow to cool slightly, garnish with thyme, and serve.
