- Preheat your oven to 350°F (175°C). Prepare a 9-inch springform pan by greasing it with butter or lining with parchment paper.
- In a large mixing bowl, cream together 1 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy, about 3-5 minutes. Add in 2 large eggs, one at a time, beating well after each addition. Sift in 1 cup of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt, mixing gently until just combined.
- Wash and slice 4-5 ripe plums into wedges, removing the pits. Toss the plum slices with a tablespoon of lemon juice to enhance taste and prevent browning.
- Pour the batter into the prepared springform pan, spread evenly, and gently arrange the plum wedges on top, pressing them slightly into the batter.
- Bake for 40-45 minutes, or until golden and a toothpick inserted comes out clean. Keep an eye on it to avoid over-baking.
- Remove from the oven and cool in the pan for about 10 minutes. Transfer to a wire rack to cool completely. Dust with powdered sugar and serve with whipped cream if desired.
