Equipment

  • Oven
  • 9-inch springform pan
  • Mixing Bowl
  • whisk

Method

Steps
  1. Preheat your oven to 350°F (175°C). Prepare a 9-inch springform pan by greasing it with butter or lining with parchment paper.
  2. In a large mixing bowl, cream together 1 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy, about 3-5 minutes. Add in 2 large eggs, one at a time, beating well after each addition. Sift in 1 cup of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt, mixing gently until just combined.
  3. Wash and slice 4-5 ripe plums into wedges, removing the pits. Toss the plum slices with a tablespoon of lemon juice to enhance taste and prevent browning.
  4. Pour the batter into the prepared springform pan, spread evenly, and gently arrange the plum wedges on top, pressing them slightly into the batter.
  5. Bake for 40-45 minutes, or until golden and a toothpick inserted comes out clean. Keep an eye on it to avoid over-baking.
  6. Remove from the oven and cool in the pan for about 10 minutes. Transfer to a wire rack to cool completely. Dust with powdered sugar and serve with whipped cream if desired.
