Ingredients

  • 1/2 cup Figs Omit if unavailable, substitute with more dates.
  • 1/2 cup Raisins Use dried cranberries for a flavor twist.
  • 1 tbsp Orange Zest Substitute with lemon zest if preferred.
For the Cranberry Layer
  • 2 cups Cranberries Frozen cranberries can be used without defrosting.
For the White Chocolate Layer
  • 1 cup Coconut Cream Full-fat coconut milk works if unavailable.
  • 1/4 cup Coconut Oil Omit if sensitive, adjusting liquids as needed.
  • 1/4 cup Maple Syrup Agave syrup or honey can be used as alternatives.

Method
 

Preparation Steps
  1. In a food processor, combine walnuts, almonds, dates, figs, raisins, orange zest, and pulse until a sticky mixture forms. Press into a lined springform pan to create the crust.
  2. Blend cranberries until smooth, then add coconut cream, melted coconut oil, and maple syrup. Pour over the crust and chill for about 6 hours.
  3. Blend remaining coconut cream, coconut oil, and maple syrup until creamy. Pour this over the cranberry layer and return to the fridge.
  4. Blend a small amount of cranberries with water for the swirl, drizzle on top of the white chocolate layer, and swirl gently.
  5. Refrigerate for a couple more hours or overnight. Remove the springform sides and serve.
