Preparation Steps
- In a food processor, combine walnuts, almonds, dates, figs, raisins, orange zest, and pulse until a sticky mixture forms. Press into a lined springform pan to create the crust.
- Blend cranberries until smooth, then add coconut cream, melted coconut oil, and maple syrup. Pour over the crust and chill for about 6 hours.
- Blend remaining coconut cream, coconut oil, and maple syrup until creamy. Pour this over the cranberry layer and return to the fridge.
- Blend a small amount of cranberries with water for the swirl, drizzle on top of the white chocolate layer, and swirl gently.
- Refrigerate for a couple more hours or overnight. Remove the springform sides and serve.
