Ingredients

For the Cookies
  • 2 cups All-Purpose Flour For a gluten-free option, use a 1:1 gluten-free flour blend.
  • 1 cup Cornmeal Yellow or white cornmeal can be used interchangeably.
  • 2 teaspoons Baking Powder Key for leavening; no substitutions recommended.
  • ½ cup Unsalted Butter Stick to real butter, as margarine can alter taste.
  • 1 cup Granulated Sugar Can reduce slightly without overwhelming the flavor.
  • 1 large Egg Binds the ingredients together.
  • 1 teaspoon Vanilla Extract Pure vanilla is recommended for deeper taste.
For the Honey Buttercream Frosting
  • ½ cup Butter Creamy base for the frosting.
  • 2 cups Powdered Sugar For sweetness and silkiness.
  • ¼ cup Honey Signature flavor for the frosting.
  • 1 teaspoon Vanilla Extract Using pure vanilla makes a difference.
  • 1-2 tablespoons Milk/Cream Adjusts consistency for spreading.

Equipment

  • Mixing Bowl
  • Electric mixer
  • Baking sheet
  • Parchment paper

Method

Cookies Preparation
  1. In a large mixing bowl, beat softened unsalted butter and granulated sugar together until light and fluffy.
  2. Incorporate the large egg and pure vanilla extract into the creamed mixture.
  3. In a separate bowl, whisk together all-purpose flour, cornmeal, and baking powder. Gradually mix this dry mixture into the wet ingredients.
  4. Cover the bowl with plastic wrap and chill the dough in the refrigerator.
  5. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Scoop tablespoon-sized balls of dough onto the prepared baking sheet and slightly flatten them.
  7. Bake for 10-12 minutes or until the edges are set and bottoms are lightly golden.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Frosting Preparation
  1. In a clean mixing bowl, beat softened butter until creamy.
  2. Gradually add powdered sugar, honey, and vanilla extract, mixing until smooth.
  3. Add milk or cream to reach desired frosting consistency.
  4. Once cookies are completely cool, generously frost each cookie with the prepared honey buttercream.
