Step-by-Step Instructions
  1. Prepare the Cake Batter: In a bowl, whisk together the gluten-free flour blend and baking powder. In another bowl, mix aquafaba with maple syrup until fluffy. Fold in applesauce and combine with dry ingredients until smooth.
  2. Bake the Cake: Preheat oven to 350°F. Spread cake batter on a lined baking sheet. Bake for about 12 minutes until set.
  3. Cool and Roll the Cake: Remove the sheet from oven, cool for 5 minutes, then roll cake while warm with parchment paper and cool completely.
  4. Make the Frosting: Blend vegan white chocolate and cacao butter until smooth, adjusting sweetness as needed.
  5. Assemble the Yule Log: Unroll cake, spread frosting, then roll it up again, coating the outside with frosting.
  6. Decorate and Serve: Dust with desiccated coconut, add cranberries and holly, chill before serving.
