- Preheat your oven to 375°F (190°C) and prepare your baking sheets by lining them with parchment paper.
- In a medium bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, ½ teaspoon of salt, and 1 teaspoon of cinnamon.
- In a large mixing bowl, combine ¾ cup of unsalted butter, ¾ cup of dark brown sugar, and ½ cup of granulated sugar. Cream until light and fluffy.
- Beat in 2 large eggs and 1 teaspoon of pure vanilla extract until just combined and let rest for 5 minutes.
- Gently fold the dry ingredients into the wet mixture and then fold in 1 cup of semi-sweet chocolate chips, 1 cup of toffee bits, and ½ cup of chopped chocolate-covered espresso beans.
- Roll the dough into large balls, approximately 3 tablespoons each, and place on the baking sheets.
- Bake for about 11–14 minutes or until golden on the edges and soft in the center.
