  • 1 cup all-purpose flour or gluten-free flour
  • 2 teaspoons baking powder
  • 2 tablespoons granulated sugar or coconut sugar
  • 1 pinch salt
  • 1 cup whole milk or almond/oat milk
  • 1 large egg or flaxseed meal with water
  • 2 tablespoons melted butter or coconut oil
  • 1 cup crushed Oreos plus mini chocolate chips if desired

Method
 

Directions
  1. In a large mixing bowl, whisk together all-purpose flour, baking powder, granulated sugar, and salt.
  2. In a separate bowl, beat whole milk, egg, and melted butter until thoroughly combined.
  3. Slowly pour the wet ingredients into the dry ingredients and mix gently until just combined.
  4. Gently fold in crushed Oreos into the pancake batter.
  5. Preheat a non-stick skillet and pour half a cup of batter per pancake. Cook until bubbles form, then flip and cook until golden brown.
  6. Stack the pancakes and serve with toppings of your choice.
