- Preheat your oven to 325°F (163°C) and line a 9x13-inch baking pan with parchment paper.
- Combine graham cracker crumbs, melted butter, and sugar in a medium bowl. Press into the bottom of the prepared pan and bake for 10 minutes.
- In a large bowl, beat cream cheese with sugar until smooth. Add eggs one at a time and then stir in vanilla extract.
- Toss diced apples with cinnamon and nutmeg, fold them into the cheesecake mixture gently.
- Pour the apple cheesecake mixture over the cooled crust and bake for 30-35 minutes.
- Cool at room temperature for about an hour, then drizzle with caramel and refrigerate for at least four hours.
- Use the parchment overhang to lift the bars from the pan and slice into squares. Drizzle with more caramel before serving.
