Ingredients

Method
 

Cooking Instructions
  1. In a large bowl, combine olive oil, cumin, paprika, turmeric, coriander, cinnamon, minced garlic, lemon juice, salt, and pepper. Mix well to form a fragrant marinade. Add the chicken strips, ensuring they are well coated. Cover the bowl with plastic wrap and let it marinate in the fridge for at least 30 minutes, or up to overnight for deeper flavor infusion.
  2. While the chicken marinates, preheat your grill or a non-stick pan over medium-high heat. Add a few drops of oil to the cooking surface to prevent sticking and help achieve a beautiful golden sear on the chicken.
  3. Once the cooking surface is ready, place the marinated chicken strips on it. Cook for about 5-7 minutes on each side, flipping when the underside is golden brown. The chicken is done when its internal temperature reaches 165°F (75°C).
  4. After cooking, remove the chicken from the heat and transfer it to a cutting board. Allow it to rest for about 5 minutes, then slice the chicken into bite-sized pieces.
  5. In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, and salt to taste until smooth and creamy. Adjust seasoning according to your preference.
  6. To serve, layer the sliced chicken in warm pita bread or arrange it on a platter. Drizzle generously with the garlic sauce and add your choice of fresh vegetables or pickled items.
